Homemade Vazhakkai Chips / Green Plantain Chips
Vazhakkai chips is a quintessential food item that is a must in any social luncheons especially in Tamilnadu. Having a good mandolin will enable you to get thin slices of the plantain which in turn will turn out crispier when fried. I had searched and searched for a good mandolin that will give me thin slices but it is my friend in the end who got me the one which worked perfectly for me. Even the costlier ones I owned already could not hold a candle to this cheap Chinese make. Hmmm... seems Though making this might seem so easy getting it perfect every time comes with more practice.

Kathirikkai Milagu Curry / Brinjal Pepper Fry
A medley of two of my favorite ingredients. This simple and delicious curry is also known by the name of “Milagootiya Kathirri Poriyal” in my native place. When literally translated it means pepper seasoned brinjal fry. During the brinjal season this delicious side dish is made often as it goes very well with rice. The liberal addition of pepper makes it more flavorful and a true delight for brinjal lovers which gets done within 15 mins.

Gongurra Pappu / Gongurra Dal
Gongurra known as Pulichcha Keerai in tamil and as Sorrel leaves in English happens to be very rich in Iron and including it at least once a week in our daily diet is very good for our health. This recipe is my Amma’s which she learned when she settled in Andhra after her marriage. I love to have this with hot steaming rice for lunch. There actually happens to be two varieties when it comes to Gongurra. One is with green stems and the other one is with deep red stem. Make sure that you choose the latter as it is much more tastier and cooks faster too especially when you are making this thokku. This recipe is very simple and easy to make yet very delicious.

Eggless Almond Custard Cookies
I had been shamelessly bribing my younger one for the past few days with fruit custard. It happens to be his favorite and the very word made him sit at home and study for the exams instead of wandering around the Apartments with his friends in the hot glaring sun during the afternoons. Just a few table spoons were left in the carton while I was cleaning up the pantry and I decided to use it in a cookie as I did not bake a cookie after the Oatmeal Raisin Cookies. I kept it very simple with just a handful of ingredients and it came out very well.

Baked Chick Peas / Baked Garbanzo Beans
Exam time has started and the pressure on the kids makes them binge on fried delights more often. At these times it becomes our responsibility to make sure that the kids eat proper diet and eat healthy snacks at regular intervals. These baked chick peas is one such healthy snack that the kids would love to munch on. My Grandmom and mom roasted them over the stove top but ever since I got the oven I have been roasting the chick peas in the oven only. It consumes very less oil and makes an absolutely guilt free snack.

Baked Cauliflorets & Giveaway Winner
I love Cauliflower a lot and especially when fried. But during the recent years, I have completely abstained from enjoying this treat keeping in mind the little scary fellow called calories as these do tend to use up a lot of oil when deep fried. Recently I tried baking them and was mighty impressed with the result. I see no reason why I should not enjoy them in future when I could get the same result by using just a percent of the oil used while baking than when compared to the deep fried ones.
