Aval Kesari Recipe - Poha Sheera

Aval Kesari Recipe

Wishing you all a very happy New Year. Hope you all have a fabulous year ahead and all your wishes and aspirations come true. Aval Kesari Recipe - Poha Sheera Recipe with step by step photos. It is an easy sweet made mostly during Navratri Festival and Krishna Jayanthi. It takes very little time and expertise to make this quick and easy kesari recipe.

I simply love the grainy texture of it and next to the rava kesari this is made often at home whenever the sweet bug bites us. Here I have used the white colored thicker variety of Aval (poha) to make the kesari but you can also use the thinner variety and if color is not an issue for you you can also use the red shaded variety.

I normally make this is an open pan but last year while making neivedhyam for Navratri I tried to adapt the procedure of the Rava Kesari recipe done by the Autolysis method and it turned out great though a bit loose as I followed the same measurements. So I had to cook for some time on open fire.

Poha Sheera Recipe

But this time when I made it for New Year, I adjusted the measurements accordingly and it came out perfect. Since you do not require constant supervision when made the Autolysis way, I can safely allow my kids to cook it as well.

Aval Kesari is not only apt for prasadham but it also comes in handy to serve as a dessert when any unannounced guests drop by and you do not have the time to prepare something elaborate.

Aval Kesari recipe with step by step photos:

Aval Kesari Recipe-1
1. Heat a pan and dry roast aval for 2-3 mins over low flame taking care not to burn it.
2. Let it cool down a bit. Transfer to a mixer jar and pulse to a coarse consistency till it resembles fine grits.

3. Sieve it thoroughly. This step is optional but it will remove bigger grits which you can pulse again ensuring the kesari to be of uniform consistency.
4. Heat a pressure cooker with ghee. Add broken cashew nuts and roast for few seconds.
