    Cornflakes Mixture Recipe - Corn Flakes Chivda Recipe

    Cornflakes mixture recipe with stepwise photos. This cornflakes chivda is done in the microwave with just 1 teaspoon oil. This makes it a guilt-free and totally low-fat snack.

    If you are looking for a low-calorie savory to make for Diwali, then this cornflakes mixture is for you as it is made with unsweetened & raw cornflakes.

    They store well and you can make this in bulk whenever you are free and store it in an airtight bin to eat at leisure.

    We get unroasted cornflakes in the market which I have used here to make this mixture.

    Everyone at home loves mixture in general and this is something I let them enjoy to their heart’s content without saying No.

    About

    South Indian mixture is an amalgamation of several savories which are all deep-fried in oil making it high in calories.

    I have attempted the same mixture by using raw cornflakes & roasting them in the microwave along with other wholesome ingredients and then adding seasoning to it making it low fat.

    This cornflakes mixture will become a hot favorite once you try it out because they are

    Ingredients

    Cornflakes: I have used raw cornflakes to make this mixture which I have also roasted in the microwave

    Aval: Use the thick variety of either white or brown poha. Avoid using thin poha for this mixture.

    Roasted gram dal: Also called pottukadalai or chutney dal.

    Peanuts: Use raw & unsalted peanuts for the mixture.

    Cashew nuts: Use halved cashews instead of whole or chopped cashews.

    Seasoning: Red chili powder, curry leaves sprig are seasoned in oil.

    Tastemakers: salt & sugar are added to bring in the taste.

    Instructions

    To make Cornflakes Mixture,

    1. In a microwave-proof bowl place the raw corn flakes and microwave at high for 3-4 minutes till they pop up and become crisp.

    2. I spread it directly on the turntable itself.

    3. Mix once after every minute to avoid burning and to get flakes that are done crisp & crunchy. Transfer to a bowl. I did it in 2 batches.

    4. Likewise repeat for aval (poha), peanuts, roasted gram dal & cashew nuts one after the other.

    5. Heat a large, deep pan. Add oil and let it become hot almost to a smoking level. Turn off the flame and take the pan off the stove.

    6. Immediately add red chilli powder, salt, sugar, and curry leaves and mix briskly.

    7. Add all the roasted ingredients to the pan and mix gently till all the ingredients get well coated. Store this cornflakes mixture in an air-tight container and enjoy at leisure.

    FAQ's

    What else can I add to the cornflakes Mixture?

    You can add almonds, sunflower seeds, mini jeera candies, and raisins too. If you want a tangy taste, you can add 1 teaspoon of chaat masala powder along with red chili powder.

    Can it be done entirely in the Microwave itself?

    You can do the mixing of the mixture in the microwave itself if you have a large enough microwave-proof bowl. As I did not have one, I did that step on the stovetop.

    Can I use regular packaged cornflakes?

    Though you can use the regular cornflakes, it will be way too sweet and will not be that crisp as it is supposed to be & the mixture will go soft soon after storing instead of staying crisp.

    Can I do it on the stovetop?

    Yes of course. You can dry roast each ingredient in a pan one after the other over medium flame tossing frequently to prevent them from burning. It will only take a little bit more time than when compared to making it in the microwave.

    Storage & Shelf Life

    Store this cornflakes chivda in a clean & dry airtight container. They will stay good for up to a month. Store only at room temperature.

    Ingredients
      

    • 250 gms Raw Cornflakes
    • ½ cup Aval or Poha
    • ¼ cup Roasted Gram dal
    • ½ cup Raw unsalted peanuts
    • 20 Cashew nuts
    • 1 Curry leaves sprig
    • 1 teaspoon Red chili powder
    • ½ teaspoon Sugar
    • 1 teaspoon Oil
    • Salt to taste
    Prevent your screen from going dark

    Instructions
     

    • In a microwave proof bowl place the corn flakes and microwave at high for 3-4 minutes till they pop up and become crisp. I spread it directly on the turntable.
    • Mix once after every minute to avoid burning and to get crisply done flakes. Transfer to a bowl. I did it in 2 batches.
    • Likewise repeat for aval (poha), peanuts, roasted gram dal, cashew nuts & roast them.
    • Microwave each ingredient separately as the roasting time will differ for each ingredients & once done keep transferring to the same bowl.
    • Heat a large deep pan. Add oil and let it become hot almost to a smoking level. Turn off the flame and take the pan off the stove.
    • Immediately add red chili powder, salt, sugar, curry leaves and mix briskly. This is to prevent the ingredients from getting burnt.
    • Add all the roasted ingredients to the pan and toss well till all the ingredients get well coated with the spices.
    • Store this cornflakes mixture in an air-tight container and enjoy at leisure.
