Eggless Baked Oats - a ridiculously easy, healthy & versatile breakfast or snack using simple ingredients that gets done in 5 mins of prep time and 3 simple steps.
When my friend Morgan showed her meal prep over the weekend, I was intrigued by the big cake that she had baked for herself. I was even more pumped to make it when she shared the basic version of it which was apparently a trending viral food video in Tik Tok.
The more basic version she shared had eggs and had no sweetener in it. Looking at the recipe made me realise that it was like a baked version of smoothie.
So I adapted the recipe and made it to suit my needs by making it eggless, adding sweetener of my choice and adapting my Green Smoothie recipe.

Difference between Baked Oatmeal & Baked Oats
Though both uses almost the same set of ingredients, the texture of both vary a lot.
There is no blending and the oats is mixed as such and baked. It looks like oats pudding as the top comes out crisp and crunchy and it goes well with some warm milk.
Oats is blended along with other ingredients to a smooth batter and the resulting baked oats is a like a dense cake.
I have used gluten free rolled oats here and it is also the preferred choice.
Make sure the banana is ripe. It gives a creamy consistency to the baked oats.
Provides the liquid base for the cake and also acts as an egg substitute. If you do not mind adding eggs, just add 1 egg in the place of milk.
A healthy addition and also acts as a egg substitute. You can also use chia seeds in its place.
Provides nutritive value and also gives the cake a creamy texture. You can totally skip it if you do not have on hand.
High in chlorophyll & is considered a super food.
I have used cane sugar. You can use maple syrup, honey, stevia or sugar. You can also totally skip adding sweetener as the original tik tok baked oats recipe do not have it.
How to make eggless baked oats
- Add all the dry ingredients to a blender jar.
2. Add banana and spinach.
3. Add milk of your choice.
4. Blend till smooth and creamy.
5. Pour into a greased baking dish or ramekin.
6. Bake till a tooth pick inserted comes out clean.
Basically you can make this eggless baked oats in several different ways.
Use different types of fruits either while blending or as a topping.
You can add a scoop of any protein powder of your choice, almond meal or chia seeds to increase the nutritive value.
Use almond mylk in place of regular milk
Use maple syrup or cane sugar instead of honey.
You can drizzle peanut butter on top replacing chocolate syrup or nutella.
Use Rolled oats in this recipe. Steel cut oats will not work in this recipe.
Make sure to grease whichever greasing pan well to prevent the cake from sticking to the pan.
Using a high speed blender to grind till smooth is highly recommended.
You can either bake in a single baking dish like I have done here or use several ramekins for easy storage or for single serving purpose.
Can I use Microwave?
If you do not want to bake the oats & wish to microwave to cut short the time, yes you can do it.
Make sure to use a microwave proof container and microwave for 1-½ to 2 min or until the oats appears to have set.
Like any baked goods, this eggless baked oats tastes great when served warm after baking.
You can store it an airtight container upto a week when you refrigerate immediately after it comes to room temperature.
You can also freeze it upto a month or so, though I have done it but it should stay well.
Reheating baked oats
Take the baked oats out of the fridge and let it thaw down a bit and come to room temperature at least partially.
Place it on a microwave safe plate or bowl and microwave at high for 30 secs to 1 min depending on how warm you prefer it and dig in.

Eggless Baked Oats Recipe
- Rolled Oats - ½ cup
- Baking powder - 1 tsp
- Flax seeds - 1 tbsp
- Cane sugar - 1 tbsp
- Matcha powder - 1 tsp
- Salt - ¼ tsp
- Ripe Banana - ½
- Milk - ½ cup
- Spinach - 1 handful
- Chocolate syrup or Nutella
- Preheat: Preheat oven to 190°C.
- Blend: Add all ingredients except for the topping into a high speed blender and blend until fully combined, smooth and resembles like a smoothie.
- Bake: Pour batter into greased baking dish or ramekin. I used an 8 inch ceramic dish. Bake at 190°C for 20 to 25 mins or until an inserted toothpick comes out clean.
- Serve: Let cool, top the eggless baked oats with a drizzle of chocolate syrup or nutella.
