Why you’ll love this recipe
As this cake bakes, the delicate and flavorful filling transforms into a thick custard, binding the apple slices together to create an aromatic and delicious treat.
I adapted this recipe from Dorie Greenspan’s book, "Baking Chez Moi". I had already baked this cake twice last year when I stumbled upon the recipe. Just recently, I whipped up another batch to use up the apples sitting in my fridge.
My family isn't big on apples, but I always find ways to incorporate them into recipes. This cake is a fantastic solution. Sometimes, I make stuffed crepes for my kids during their holidays, and they absolutely love it. My eldest even said that this cake tastes almost like those crepes!
These custardy apple squares are incredibly easy to make. It's a perfect recipe to get your kids involved in the kitchen and have fun baking together especially during the holiday season.

Do not overbake else it will become hard and taste bitter.

Custardy Apple Squares Recipe
Ingredients
- ½ cup all purpose flour
- 3 medium sized apples
- 1 teaspoon baking powder
- ⅓ cup sugar
- 2 eggs
- 1 pinch salt
- 6 tablespoon or ⅜ cup milk
- 2 teaspoon vanilla extract
- 2 tablespoon unsalted melted butter
- powdered sugar for dusting optional
Instructions
- First, preheat the oven to 400°F/200°C. Then, butter an 8-inch pan and line the bottom with parchment paper.
- Next, peel the apples. If you have a mandoline, thinly slice the apples, rotating them until you reach the core. If you don't have a mandoline, no worries! Just core the apples and use a sharp knife to slice them as thin as possible. Don't stress if the slices aren't all the same size.
- In one mixing bowl, whisk together the flour and baking powder. In another large mixing bowl, combine the sugar, a pinch of salt, and crack open the eggs one by one. Whisk for about 2 minutes until the sugar dissolves and the eggs become pale.
- Now, whisk in the vanilla extract, followed by the milk and melted butter. Add the flour mixture and whisk until the batter is smooth without any lumps.
- Next, add the sliced apples to the batter and gently fold them in with a spatula until they're evenly coated.
- Carefully scrape the batter into the prepared pan and smooth out the top.
- Bake for 40-50 minutes or until the top turns golden and puffs up nicely. You can check if it's done by inserting a skewer into the center – if it comes out clean, your Custardy Apple Squares are ready!
- Let them cool on a rack, and if you like, dust the top with confectioner’s sugar for an extra touch of sweetness.
- Finally, slice the cake into squares and enjoy!

Hi Radhika! These custardy apple squares look so tempting!! Is it possible to use custard powder instead of using eggs in this recipe?
Thanks.

Hi Radhika ! These custardy apple squares look so tempting! Is it possible to use an egg substitute in the place of 2 eggs to make it an eggless recipe ?
Swathi
Looks so yummy!! My query is about the butter....do we measure the quantity after melting or as in this recipe, if you say 2 tbsp melted butter, do we take 2 tbsp soft butter and then melt it?
Radhika
You need to measure the melted butter. So take enough butter, melt it and then measure 2 tbsp. Hope I'm clear.
