Tomato Pasta Soup Recipe with step by step photos. A filling, sumptuous bowl of piping hot tomato pasta soup that makes a wholesome meal in itself. It will make an absolutely sumptuous dinner when served with a warm crusty bread and a salad on the side.

In my household, as far as soups go, I do not have the luxury of opting for any shortcuts like using store bought bouillon orΒ soup cubes which can save a hell lot of time. ArjunΒ is highly allergic to MSG and anything and everything should be from scratch.

I keep collecting vegetable scraps on a daily basis and once a fortnight use them to make vegetable stock from scratch. Around that time, the kids will know that β€œsoup time” is just around the corner.

Trust me, soup cubes may be handy but there is no way a soup canΒ taste as delicious as it does which is made using homemade stock.

Arjun loves soups, especially the spicy ones.Β Usually, I just make this vegan tomato soup for him but recently my kids have taken a sudden affinity to pasta.

Earlier they used to prefer only the noodles and did not much care for any other pasta,Β but all that changed thanks to their class mates. As they see the other kids bringing pasta in their lunch boxes, they too wanted to have at home.

I usually serve this tomato pasta soup piping hot for dinner with either Sun Dried Tomato Focaccia or Cheesy Garlic Pull Apart Rolls which tastes absolutely fabulous.

1. Blanch tomatoes, peel off the skin and crush lightly with your hands.

2. Heat a pressure cooker. Add olive oil, bay leaf,Β chopped onions, garlic, carrots and cook over low flame till the onions turn translucent.

3. Add crushed tomatoes, cinnamon powder,Β 1/2 cup water, close with lid and over low flameΒ cook for 2 whistles.
After the pressure releases, cool, remove the bay leaf.

4. Transfer to a blender and blitz coarsely. I leave it out to be chunky.

5. Transfer the blitzed soup to a sauce pan. Add vegetable stock, kashmiri red chili powder or red chili flakes, blackΒ pepper, mixed herbs, uncooked pasta and salt. Mix well,Β cook over high flame and bring it to a boil.

6. Reduce the flame and let it simmer for 8 to 10 mins. Check if the pasta is cooked properly, else cook for 2 to 3 more mins. Take the pan off the stove. Top with fresh herbs or grated cheese.

Serve this tomato pasta soup in individual bowls and with any bread of your choice for a wholesome meal.

If you do not have homemade vegetable stock, use 1 soup orΒ bouillon cube but go easy on the salt added to the soup. You can use any type of pasta to make this soup.

Ingredients
  

  • Pasta - 1/2 cup (I used spiral)
  • Tomato - 4
  • Onion - 1
  • Garlic - 4 cloves
  • Carrot - 1
  • Bay leaf - 1
  • Mixed herbs - 1 tsp
  • Vegetable stock - 4 cups
  • Cinnamon powder - 1/4 tsp
  • Kashmiri red chili powder or red chili flakes - 1/2 tsp
  • Black pepper powder - 1 tsp
  • Salt - to taste
  • Olive oil - 2 tsp



Instructions

    I love the idea of fresh soups. I can’t and don’t buy canned soup except at Thanksgiving when I have to make a family favorite casserole.

    Your recipe had me puzzled. Chilly, ripe/Jalapeno??? Then I realized you were meaning chile. That is a good one! I live in El Paso right on the border with Mexico so Spanglish is often confusing.
