Baked Rice and Beans
Ingredients
½ cup cooked beans (I used black but any color works just as fine)
2 cups brown rice (long grain rice or basmati can be used instead. Never tried jasmine. Arborio or sweet/sticky rice
would not make a good substitution)
½ tsp. turmeric (optional)
¼ tsp. flaked chili peppers (optional)
~ 1tsp. dried herbs (optional)
1 tsp. salt
pinch of black pepper
4 cups stock or water
Directions
Preheat the oven to 400F. Rinse the rice couple of times until the water comes clean.

The beans and rice look wonderful! I have never baked rice in the oven before but it’s obvious from your pictures how well it works. Turmeric imparts such a vibrance to rice and I can almost smell its wonderful aroma. Yum!
