Pineapple Fried Rice recipe with step by step photos. This Vegan Thai Pineapple Fried rice is made using brown rice and makes an easy, sumptuous and wholesome meal that can be rustled up in under 15 mins.
I love the combo of sweet N spicy and sweet and salty right from childhood. For example I love eating spicy kulambu sadam with sweet mango pachadi and salty appalams crushed over payasam. This pineapple fried rice is also along the same lines with a combination of sweet, spicy and salty all at the same time.
It is also one of the easiest way to make my children eat brown rice. If I’m going to serve brown rice along with sambar or rasam, I stand absolutely no chance to make them eat but with this pineapple fried rice, they finish it off with a complaint.
Also if you are a person, who cooks brown rice in pressure cooker, please stop now. I know its difficult to cook the traditional way, but if you are going to pressure cook brown rice, you may as well not it at all and stick to white rice itself. After-all, our preference for the time saving and easy options got us here and its high time we went back to the roots if we are looking for a healthier lifestyle.
Pineapple Fried Rice with stepwise photos:
1. Heat a pan with sesame oil. Add garlic, ginger, onions and saute over high flame till it softens.
2. Add carrots, green bell peppers, sweet corn and cook over medium flame till they soften and get half cooked for 2 to 3 mins.
3. Add salt, tamari or soy sauce, black pepper to taste and mix well.
4. Add pineapple and give a toss.
5. Add sriracha or chili garlic sauce, brown rice and mix well.
6. Cook over medium flame mixing well till the rice gets heated well. Take a taste test for salt and heat and add to adjust accordingly.
7. Add green onions and toss well.
8. Thai pineapple fried rice is ready to be served hot with extra drizzle of sriracha if preferred.

- Brown rice, cooked - 1-1/2 cup
- Pineapple, diced - 1/2 cup
- Onion, small - 1
- Green bell pepper, diced - 1/4 cup
- Sweet corn, frozen or fresh - 1/4 cup
- Green onions, chopped - 2 tbsp
- Carrots, finely chopped - 1/4 cup
- Garlic - 3 pods
- Ginger - 1/2 inch piece
- Sriracha or chili garlic sauce - 2 tsp
- Tamari or soy sauce - 1 tsp
- Salt - to taste
- Black pepper - to taste
- Sesame oil - 2 tbsp
- Chop onions finely. Slice garlic thinly. Grate ginger and keep aside.
- A day old cooked brown rice works well after thawed. If freshly cooked, spread it on a plate and keep it in the refrigerator for 1 hour prior to cooking without closing.

Hi, why is a pressure cooker not good for brown rice? I’m not sure if we are referring to the same brown rice too – I use the PC for basmati and sona masuri rice (both brown).
