There are a ton of variations that you can make to these egg free, butter free baked oatmeal breakfast bars.
These are delicious, wholesome and nutritious with a ton of dry fruits and nuts that are so good and healthy for you.
Grab one of these bars when ever you get a snack attack and reach for a pack of chips or something unhealthy for you.
As the exams are just around the corner, these oatmeal breakfast bars are handy to keep around the kids for a quick snack whenever the hunger pang hits, as most of them refuse to snack on fruits nowadays.

I have used 100% wholegrain rolled oats instead of quick cooking oats and I would highly recommend that you go for rolled oats in this recipe too.
Rolled oats absorb the liquids well, gives a nuttier taste and bring wholesome goodness to your body.
I did not use any store bought processed coconut in this recipe but used fresh grated coconut which made my entire house smell like a tropical paradise while these bars baked.
For Variations, add in chocolate chips, more dry fruits other than raisins, more nuts other than the almonds that I had used here. If you replace honey with agave or maple syrup, these bars become totally vegan too.
Do not use replace coconut oil with any other vegetable oil as it will ruin the taste completely.
If you do want to replace it, then use melted butter.

Oatmeal Breakfast Bars recipe with stepwise photos:
Preheat oven to 350 F / 180 C. Line one 8 x 8 inch baking pan with parchment paper. Set aside.
1. Grind flax seeds using mixie jar to a coarse powder.
2. Mix flax seed powder in 4 tbsp water in a bowl and rest for 5 mins to form into flax gel.
3. In a large mixing bowl, mix together Rolled oats, whole wheat flour, salt, baking powder and brown sugar.
4. Add in chopped almonds, raisins, coconut and mix everything together.
5. In another mixing bowl, add coconut oil, peanut butter, flax eggs, apple cider vinegar, wild honey, vanilla extract and mix using a balloon whisk till well combined and smooth.
6. Alternately you can also add all the above mentioned liquid ingredients into a blender and pulse few times for even mixing and to simplify the work.
7. Pour the liquid ingredients mixture over the dry ingredient mixture and combine using a spatula until all the ingredients are moistened. I find mixing with my fingers works better than using a spatula.
8. Dump the entire dough into the prepared pan and spread it evenly. First push down with your knuckles and then using the flat bottom of a small bowl, press the dough firmly all around the pan making sure the top surface is smooth and even.
9. The dough should be very firmly pressed down for the bars to stay put without breaking apart when you cut them.
10. Bake the dough for 30 mins. Rotate the pan half way through after 15 mins to ensure even baking. These are done when the edges begins to brown lightly and the top is golden in color.
11. Switch off the oven and let the pan stay put inside for another 10-15 mins.
12. Remove the pan from oven and let it cool down completely to room temperature.
13. Gently lift the parchment from the pan and using a sharp knife either cut them into squares or rectangles.
Serve these oatmeal breakfast bars with a glass of milk and fruits either for breakfast or pack as a snack.

Can we omit peanut butter? Or any other substitute for the same?
You will need peanut butter for this as that also helps to hold the bars together. But you can still make it by increasing the flax seeds by another 2 tbsp, so a total of 4 tbsp, make the flax eggs and proceed further.
