Ginger Tomato Chutney recipe with stepwise photos. Looking for an easy and healthy chutney recipe to serve with Idlis and Dosas, then you need to try this chutney that is made with tangy tomatoes and ginger that makes for a lip-smacking side dish.
You can also try this garlic smoked tomato chutney, pachcha thakkali chutney or this easy tomato garlic chutney that are tomato based chutneys that go well with idli and dosa.
At home, we love both tomatoes and ginger and this chutney combines both those ingredients and comes well together as a chutney.
This inji thakkali chutney combines the heat of the ginger and tanginess of the tomatoes, and together they both taste delicious.
Since there is no coconut in this chutney, it stays good for one full day at room temperature itself without spoiling like coconut chutney, making it apt to pack in lunch boxes to office or school.
As this is a no onion, no garlic recipe, this chutney is perfect to make on fasting days when you don't use either onion or garlic in the cooking.

How to make Ginger Tomato Chutney
To make inji thakkali chutney,
1. Heat oil in a pan, fry both urad dal and red chillies and set them aside.
2. To the same pan, add thinly sliced ginger.
3. Fry them till the edges shrink in size and the colour changes slightly. Remove & set aside.
4. Add tomatoes and a pinch of salt to the pan to help them cook faster.
5. Cook till the tomatoes turn slightly mushy and soft.
6. Transfer all the sautéed ingredients into a mixie jar.
7. Add little water and grind the chutney.
8. Heat remaining oil in the same pan and season with mustard seeds and let them splutter.
9. Add the ground chutney and cook for a min. Transfer into a serving bowl.
Serve this ginger tomato chutney with idlis or dosas.
Recipe Notes
Using gingelly oil will give more flavour to the chutney.
Use well ripe tomatoes to get a naturally deep red colour. Otherwise, you can also use 2 Kashmiri red chillies along with regular chillies to get a good colour without increasing the heat.
While seasoning, along with mustard seeds, you can also add cumin seeds and curry leaves.

Substitutions
Instead of ginger, you can add garlic or onion or use all 3 of them.
Variations
While sautéing, you can add either coriander leaves or mint leaves for a different taste.
You can also add some grated coconut just before grinding the chutney, to add more volume to the chutney. It will also make the chutney a bit thick.
Storage
This ginger tomato chutney keeps fresh for a day or 2 when stored in the refrigerator. But like all tomato-based chutneys, though it won't spoil, the chutney will start to give a fruity taste when stored beyond that.

Ginger Tomato Chutney

- 2 tomatoes chopped
- 3 inch ginger piece thinly sliced
- 6 whole dry red chillies
- 1 tablespoon urad dal
- 1 teaspoon mustard seeds
- salt to taste
- 1 tablespoon oil
Instructions
- Place a Kadai over medium heat on the stove and add 2 teaspoon oil.
- Add urad dal and fry till gets golden brown. Now add dry red chillies and fry for 1 more min before removing both into a bowl. Set this aside.
- Add ginger to the pan and sauté till the ginger shrinks a bit and becomes soft. Transfer it to the same bowl.
- Add tomatoes, a pinch of salt and sauté till it shrinks and becomes soft. Let it cool completely.
- To a mixie jar, transfer the tomatoes, roasted dal, chillies and ginger. Add salt, 3 to 4 tablespoon water and grind everything to a chutney consistency.
- Heat the same pan with the remaining oil. When hot, add mustard seeds and let them splutter.
- Add the ground chutney to the tempering and cook for 1 min over medium flame and transfer the chutney to a serving bowl.
