These orange muffins are so versatile that they can be baked into a quick bread as well. I adapted these muffins from Annie’s Eats blog and the best thing about these muffins turned out to be the glaze. So do not miss out on it.
As I do not get sour cram in my place, I had to substitute them with fresh curd and these orange muffins indeed turn out good.
Whether it is for breakfast, brunch or a quick pick me up these orange muffins will not disappoint you.
Recipe Notes
If you want to freeze the muffins, then do so without drizzling the glaze.
There was no need to add any flavouring agent as the orange zest took care of it.
I made 6 small muffins and baked the rest of the batter in a pudding bowl.
Glazing is of course optional but highly recommended.
Oven timings will vary accordingly.

Orange Muffins with Orange Glaze
Ingredients
- 1 ¾ cups all purpose flour
- 1 cup sugar
- ¾ tablespoon baking powder
- ⅛ teaspoon salt
- 1 large egg
- ¼ cup curd or yogurt
- ½ cup milk
- ¼ cup freshly squeezed orange juice
- ½ cup vegetable oil
- orange zest from 1 orange
For Orange Glaze
- 2 tablespoon orange juice
- ½ cup icing sugar
- ½ teaspoon orange zest
Instructions
- Line a muffin pan with paper liners, then preheat the oven to 180°C / 350°F.
- Whisk together flour, sugar, baking powder, and salt in a mixing bowl until combined.
- In another bowl, beat together all the liquid ingredients (orange juice, milk, yogurt, egg, and vegetable oil) until well-emulsified.
- Gradually add the flour mixture to the wet mixture in 3 batches, folding with a spatula until combined.
- Finally, mix in the orange zest. Avoid overmixing to prevent the muffins from becoming hard.
- Using a scoop, drop the dough into the muffin pan and bake for 20 minutes or until a toothpick inserted comes out clean.
- Remove the pan from the oven and let it cool for 5 minutes before transferring the muffins to a wire rack to cool to room temperature.
- For the Glaze: Mix the 3 ingredients in a small bowl till they are runny and thin. Drizzle over the muffins and let it set.

The bakes come out superbly in it. But there is no specific brand where I live. These are the paper cups (100 ml) that are used to serve tea instead of using the plastic ones to be environment friendly. I used the same.
